Tradition says that if you receive a present of a knife from a friend, you should pay a token sum of money for it, to avoid "cutting" the friendship.

Going back to the 17th Century, we can obtain documents confirming the existence, in Albacete, at that time, of craftsmen designing and making knives. Today, the knife of Albacete is a symbol. In these photographs, taken from the wll known book "Introducción al estudio de la cuchillería artística de Albacete" by Jose Sanchez Ferrer, we can observe a tipical street vendor with a selection of knives, grinders putting the finishing touches to the knives and a group of experts mounting knives. In this pictures we can observe the knife salesmen at he start of the 20th Century. They are wearing a special holster containing a selection of the best known Albacete knives, wich they will sell to train passengers during a stop-and the passengers will open their windows to purchase them.
